2 medium red bell peppers, sliced
1 large sweet onion, sliced
1 1/2 lbs. boneless, skinless chicken breasts or thighs
1/2 cup FRENCH'S® Classic Yellow® Mustard or Spicy Brown Mustard
1/2 cup honey
2 Tbsp. lime juice
2 cloves garlic, chopped
1 1/2 tsp. ground cumin
1/2 tsp. ground chipotle chili pepper
FRENCH'S® Crispy Fried Onions
ADD peppers and onions to slow cooker. Arrange chicken over vegetables. Combine mustard, honey, lime juice, garlic, cumin and chipotle chili pepper and pour over chicken.
COVER and cook on Low 7 to 8 hours or High 4 to 5 hours or until chicken is tender.
REMOVE chicken and shred. Return chicken to slow cooker and heat through. Serve over rice or in tortillas and top with Crispy Fried Onions.
