1 bulb garlic
1/3 cup Olive oil, divided
3 Tbsp. FRENCH'S® Honey Dijon Mustard
2 Tbsp. white wine vinegar
2 Tbsp. Water
1/2 tsp. salt
1/8 tsp. pepper
1/4 cup snipped fresh chives or 2 tablespoons minced green onion
Cut 1/2 inch off top of garlic; discard. Place garlic and 1/4 cup water in shallow microwaveable dish. Brush some of the oil over garlic. Cover; microwave on HIGH (100%) 3 minutes or until garlic is just tender. Drain well.
Grill garlic, cut-side-down, over medium-high heat 5 minutes or until garlic is golden and very tender. Cool slightly. Separate garlic into cloves; pinch each clove so roasted flesh slips out.
Place cloves in blender. Add remaining ingredients. Cover; process until smooth. Serve over mixed salad greens or with grilled vegetables.
Tips: Try other flavored vinegars such as tarragon or balsamic. Substitute other fresh herbs such as fresh basil, tarragon or rosemary.
