1 butternut squash, about 2-1/2 lbs., halved and seeded
3 Tbsp. FRENCH'S® Classic Yellow® Mustard Sweet
3 Tbsp. brown sugar
2 Tbsp. butter
1 cup FRENCH'S® Crispy Fried Onions Caramelized Flavored
1/2 cup crumbled blue cheese, divided (optional)
2 tsp. chopped fresh sage
PREHEAT oven to 400°F. Arrange squash, cut sides down, on lightly oiled baking sheet. Bake 40 to 50 minutes or until very tender.
SCRAPE flesh from squash; In medium bowl mash squash, brown sugar, Mustard and butter. Stir in 1/2 cup Onions, 1/4 cup blue cheese and sage. Season with salt and pepper.
PLACE squash mixture in 1-quart baking dish. Bake 15 minutes or until hot. Top with remaining Onions and blue cheese. Bake 5 minutes or until Onions are golden.
